Dan Koster makes these the Mater with a flat grind on the one side and hollow grind on the other side. This knife provides maximum cutting performance in hard-to-cut materials like cheese, tomatoes, potatoes, bread. It is also very good for fine julienne cutting.
The blade is 6 inches of 0.090 inch thick Sandvik 13C26 stainless steel. The edge is quite thin....not "delicate", but thin. The overall length is 11 inches. Sandvik 13C26 is a very high quality steel known not only for corrosion resistance but also for high hardness and very good wear resistance.
The handle is black canvas micarta w/aluminum tubes.
This model is left handed which means the flag grind is on the right side and the hollow grind is on the left side. This knife has no sheath.
